Can pre-ground beat freshly ground?

When it comes to discussing the best way to improve the coffee we make at home, the first question to ask is usually "Should I be grinding fresh each time?". Whilst the answer is a resounding "YES!" - it's not always that simple

Grinding coffee beans increases their surface area, unlocking the flavors and aromas within. Coffee contains an enormous wealth of chemical compounds and by choosing the correct amount of surface area for our desired brew method, we can perfect their extraction. When coffee is ground, more of the bean is exposed to water, facilitating a quicker and more comprehensive extraction. However, once ground the coffee has increased exposure to environmental elements. Over time, coffee releases gases built-up during the roasting process. While degassing is essential, grinding accelerates this process, leading to potential flavour loss and a flat, stale brew.


We all want our coffee to sing with freshness. Just as with whole beans, ground coffee demands protection from oxygen, extreme temperatures, and light. To achieve this, the key lies in storage. Our recommendation? Opt for air-tight, opaque containers. Say no to the fridge; often filled with a myriad of aromas, it can impact the highly volatile and sensitive aroma compounds of coffee, also the temperature fluctuations and moisture of such an environment are no friends to flavour preservation.


Freshly Ground vs. Pre-Ground: The Grinder Dilemma

Traditionally, freshly ground coffee reigns supreme, but not all grinders are created equal. A subpar grinder can yield an inconsistent grind, impacting the extraction process. Not everyone has access to top-tier burr grinders that provide uniform grind sizes. Enter the debate: Is pre-ground a worthy contender when your grinder falls short? The answer might surprise you. While high-end grinders offer precision and consistency, not all grinders share these traits. Blade grinders, in particular, struggle with uniformity, resulting in inconsistent grind size distribution.
